The other day, mum surprised me with an awfully delicious apple cake (“I made one you can eat as well” – that’s maternal love right there). Based on a recipe she found on Chefkoch.de, she modelled around a bit, then she forwarded me the original recipe including her comments and I “improved” it a little more. Not that it actually needed improving but I will rarely ever use a recipe 1:1. This is what I ended up with : Ingredients
- 300g flour of your choice (I used white/ spelt flour half/ half)
- 1 package baking powder
- 150g sugar of your choice (I used 100g brown and 50g white sugar)
- 1 package vanilla sugar
- pinch of salt
- 100ml oil (I used corn oil)
- 250ml water
- 1 table spoon apple vinegar
- peel of one lemon
- 4 apples
- icing sugar
- cinnamon, cardamom to taste; raisins, nuts to your liking
Directions Peel and de-pip apples, cut into wedges. Mix all dry ingredients, then slowly add liquid ingredients. Especially when using wholemeal/ spelt flour add extra sugar if you like it sweet. Now is the time to swirl in spices, nuts or raisins if that’s what you think is missing. Pour batter into a well-oiled baking pan and put apple wedges on top slicing them crosswise. Bake for approx. one hour at 180°. Dust with icing sugar. Now comes the most important part: Eat. The batter is quickly prepared and only uses standard ingredients. Therefore, this vegan apple cake is ideal to bring to this last-minute invitation for coffee or whenever you (rightly) think that there should be more cake at the office.
