Whoever claims they would never eat vegan food (I’m rolling my eyes at them here) have usually at least had this simplest-of-all vegan dishes before: a salad.
After all the hearty food we happily ingested over the Christmas holidays and during numerous family visits, Mr A and I are now looking forward to a big bowl of fresh, juicy salad. Yes, Mr A actually likes salad and will demand big colourful creations on a regular basis should I fail to present them by myself.
We usually toss into the bowl whatever in the fridge and/ or pantry suits our fancy (or needs to be eaten) but of course we also have our favourite ingredients.
They are:
- Lettuce
- Arugula
- Tomatoes
- Kidney beans
- Corn
- Button mushrooms
- Avocado
- Dry roasted pine or pecan nuts
While Mr A enjoys a simple olive oil/ balsamic vinegar dressing, I have come to prefer a good tablespoon of tahina with fresh lemon juice and some olive oil.
We’ll usually have it with fresh bread like this rosemary-garlic focaccia (if we’re fancy. If not, we’ll run down to the stores and pick up some breadrolls there).
So simple, so fresh, so good.
